Apple Cake
Sweetened with dates and apples

Recipe
Ingredients
- 4 green apples
- 2 eggs
- 1/2 cup dates
- 1/2 cup organic wholemeal flour
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
Method
Preheat the oven to 175�C (350�F).
Peel and core the apples, and grate them into a pot.
Chop the dates finely and add to the apples.
Add a tablespoon of water and simmer the dates and apples on low heat until soft, about 10 minutes.
Take off the heat and allow the mixture to cool for 5 few minutes. It doesn't have to be cold, just cool enough so that the eggs won't immediately cook when you add them.
Beat 2 eggs together and add to the partly cooled fruit.
Add in the flour, baking powder and cinnamon and mix.
Put the mixture into a shallow non-stick pie dish.
Bake in the oven for 20-30 minutes.
Take it out of the oven while still very moist and serve with Strawberry Tumble and plain yoghurt.
