Avocado Mayonnaise
A delicious mayonnaise without oil or eggs.
Preparation time: 5 minutes
Recipe
Ingredients
- 1 avocado
- 1/2 cup (125 ml / 4 fluid ounces) apple juice, or apple juice and water
- juice of two lemons
- 1 tablespoon chopped chives, or chopped greens from a bulb of sprouted garlic
- 2 tablespoons finely chopped parsley
- 1 tablespoon wholegrain mustard
- pinch of sea salt
Method
Put the avocado with the lemon juice, mustard and salt in blender and combine.
Slowly add the apple juice and/or water until a thick but pourable consistency is reached.
Take the mixture out of the blender and mix in the herbs.
Serve with salad.
Note: this mayonnaise cannot be kept for long periods of time as the avocado begins to brown very quickly. It is best made just before use.
