Avocado Mayonnaise

A delicious mayonnaise without oil or eggs.

Recipe

Ingredients

  • 1 avocado
  • 1/2 cup (125 ml / 4 fluid ounces) apple juice, or apple juice and water
  • juice of two lemons
  • 1 tablespoon chopped chives, or chopped greens from a bulb of sprouted garlic
  • 2 tablespoons finely chopped parsley
  • 1 tablespoon wholegrain mustard
  • pinch of sea salt

Method

  • Put the avocado with the lemon juice, mustard and salt in blender and combine.

  • Slowly add the apple juice and/or water until a thick but pourable consistency is reached.

  • Take the mixture out of the blender and mix in the herbs.

  • Serve with salad.

  • Note: this mayonnaise cannot be kept for long periods of time as the avocado begins to brown very quickly. It is best made just before use.
