Azuki Pasta Sauce

A hearty pasta sauce with beans to give a solid protein base to your meal.

Recipe

Ingredients

  • 1 onion
  • 1 stick celery
  • 1 carrot
  • 1 zucchini
  • 4 medium tomatoes
  • 125 grams (4 ounces) mushrooms
  • 400 grams (14 ounces) cooked azuki beans (freshly cooked or canned)
  • 1/2 cup tomato paste
  • 2 tablespoons tamari
  • sea salt and freshly-ground black pepper to taste
  • water

Method

  • Chop all the vegetables into small pieces.

  • Put the chopped onion into a pot with about a tablespoon of water and cook it on high heat for 3 or 4 minutes, stirring and adding more water as needed to prevent it from sticking.

  • Add the rest of the chopped vegetables and the other ingredients.

  • Add 2 cups of water into the pot, stir and bring to the boil.

  • Put a lid on the pot and simmer on low heat for 20 minutes. You may need to stir it now and then to stop it the mixture from sticking to the bottom of the pot.
