Cucumber and Basil
Although this looks like a salad, do try it hot. The cucumber is great when it is just heated through, before it has a chance to become soft.

Ingredients
- 1 cucumber
- 2 tablespoons finely-chopped fresh basil
- pinch of teaspoon sea salt
Method
Peel the cucumber and cut it lengthways into quarters.
Cut out the seeds and discard them.
Slice the cucumber into thin chip shapes.
Heat a heavy based fry pan with two or three tablespoons of water and the salt.
Drop in the cucumber chips and stir while they heat through. Be careful not to cook the cucumber, just warm it.
Sprinkle with the basil and serve.
