Earth and Sky Lentil Pie
So you think lentils are boring? Try this recipe and you will change your mind.
Preparation time: 20 minutes (including boiling the lentils and potatoes)
Cooking time: 30 minutes
Recipe
Ingredients
- 2 medium sized potatoes
- 340g (12 oz) brown lentils
- 220g (8 oz) grated reduced fat cheese
- 2 onions
- 55g (2 oz) mushrooms
- 1/2 teaspoon ground cloves
- 1 cup (50 g / 2 ounces) breadcrumbs, preferably wholemeal
- 1 egg
- several sprigs fresh parsley, to make 1 tablespoon when chopped
- sea salt & freshly-ground black pepper to taste
Method
Preheat the oven to 180�C (350�F).
Put the lentils into a pot of boiling water and cook until soft (about 20 minutes).
While the lentils are cooking wash and peel the potatoes. Chop them into small pieces (to facilitate fast cooking ), about 1 cm (1/2 inch) cubed, and boil them until soft, in a separate pot to the lentils (10 to 15 minutes, depending on the size of the pieces)
Mash the potatoes, adding a few spoonfuls of water to make them a smooth consistency and a dash of salt and pepper, and put them aside.
Chop the onions, mushrooms and parsley, and lightly beat the egg.
Drain the lentils and add all the other ingredients into the pot with them. Mix together and put into a baking dish.
Top with mashed potato (the clouds above the Earth), keeping a little of the grated cheese to sprinkle on top (the silver lining to the clouds?).
Bake for 30 minutes
