Easy Pudding

This pudding makes a great caramel sauce underneath itself as it cooks.

Ingredients

Pudding base
  • 1 1/2 cups (185 grams / 6 ounces) wholemeal flour
  • 1 cup skim milk
  • 1 cup dried fruit
  • 2 teaspoons baking powder
Caramel sauce
  • 2 cups boiling water
  • 1 tablespoon butter (omit this if you want it to be fat-free, although it does contribute to the delicious sauce)
  • 1 1/4 cups malt

Method

Preheat the oven to 175�C (350�F).
First make the pudding base:
  • Mix the flour, dried fruit and baking powder together in a bowl.

  • Add the skim milk and mix well.

  • Put the mixture into a non-stick baking dish. Make sure your baking dish is at least twice as deep as the level of the mixture, as it will rise while cooking, and if the dish is too shallow the sauce will escape over the sides.

Then make the caramel sauce:
  • Put the butter and honey in a bowl with the boiling water and stir till dissolved.

  • Pour this over the top of the base mixture.

  • Put into the oven and cook for about 30 minutes. You know it is cooked when the top is golden and there is a caramel-like sauce formed underneath.
