Farmer's Cake
A high fibre cake with the taste of malt and bran.
Preparation time: 5 minutes
Cooking time: 45 minutes
Recipe
Ingredients
- 1 1/2 cups (185 grams / 6 ounces) wholemeal flour
- 1 1/2 cups bran, or bran and fresh wheatgerm mixed
- 1 1/2 cups dried fruit, such as raisins, sultanas or dates
- 1 cup (250 ml / 8 fluid ounces) rice or barley malt
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 1/2 cups water or skim milk
Method
Preheat the oven to 175�C (350�F).
Mix all the ingredients together in a bowl, adding the milk last.
Put the mixture into a non-stick cake tin and bake in the oven for 35 to 45 minutes. Check after 35 minutes or so to see if it is cooked. Take it out when it is still moist in the middle - this cake is better if it is not too dry.
