Green and Gold Zucchini Pie

Made with green zucchini and parsley, and baked till golden on top. The black pepper gives this pie a spicy sparkle.

Recipe

Ingredients

  • 375 g (12 oz) zucchini
  • 5 eggs
  • 1 large onion
  • 1 cup ( 125 g / 4 oz) grated reduced fat cheese
  • 1 cup ( 125 g / 4 oz) wholemeal self-raising flour
  • 1 or 2 tablespoons fresh herbs, eg dill, parsley, oregano
  • 1/2 teaspoon freshly-ground black pepper

Method

  • Preheat the oven to 175�C (350�F).

  • Grate the zucchini and the cheese, chop the onion and fresh herbs, and lightly beat the eggs.

  • Put all the ingredients into a bowl and stir together.

  • Pour into a non-stick pie dish and bake for about 30 minutes, until golden on top.
