Herb Waters

Herb drinks are a refreshing alternative to tea and coffee.
Use fresh herbs if possible: even two or three pots of herbs on the windowsill will provide enough for a number of tasty drinks.
In the summer, keeping a jug of herbal water in the fridge can be a welcome alternative to water or sweet juices.

Preparation time: 2 minutes
Infusing and cooling time: 1 hour (hot method) to overnight (cold method).

Some suggestions to try:
  • Lemon slices
  • Ginger root
  • Rose petals
  • Peppermint
  • Spearmint
  • Borage flowers
  • Rosemary
  • Lemon balm
  • Orange peel
  • Lemongrass
  • Hibiscus flowers
  • ...or a combination of any of these.

Quantities and proportions are all governed by your personal taste, but if you are unsure where to start, try roughly two teaspoons of fresh herb per cup of water.

Make sure the leaves or flowers you use have not been sprayed with pesticides of course.

Hot Method

  • Make the herb water as if you were making a cup of tea, by pouring boiling water over the herb.

  • Let it cook to room temperature then refrigerate it to chill it further.

Cold Method

  • Simply put the fresh herb into a jug of cold water and leave in the fridge overnight.

  • For maximum flavour, leave the herb in the water right until you drink it.
