Lettuce Rollups
A real salad roll: raw vegetables, sprouts and herbs rolled in fresh lettuce leaves.

Recipe
Ingredients
- 4 tablespoons mung bean or young (ie 2 day old, sweet tasting) lentil sprouts
- 1/2 small beetroot (to make about 2 tablespoons when grated)
- 1/4 Spanish (mild) onion, or 2 spring onions
- 1 avocado
- 1/4 cup fresh mint
- 1/4 cup fresh parsley
- 6 to 8 large lettuce leaves
Method
Grate the beetroot.
Chop the onion, mint and parsley finely.
Mash the avocado.
Put all the ingredients together in a bowl and mix well.
Put a spoonful of this mixture on each lettuce leaf and roll the leaf up tightly, securing with toothpicks if necessary.
