Muffins

A wholesome muffin recipe with no added fat or oil.

Recipe

Ingredients

  • 1 cup raisins or chopped dates
  • 1 grated apple
  • 1 cup (125 grams / 4 ounces) wholemeal flour
  • 1 cup (125 grams / 4 ounces) wheatgerm
  • 1 cup (125 grams / 4 ounces) bran
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup water or milk
  • 1/2 cup golden syrup or honey

Method

  • Preheat the oven to 160�C (325�F).

  • Put the honey or golden syrup into a pot with the water and heat it till it is dissolved.

  • Mix all the dry ingredients together in a bowl.

  • Add the liquid to the dry ingredients and mix well.

  • Spoon the mixture into non-stick muffin tins and bake in the oven for 20 - 30 minutes.
