Natto Tofu

Tofu, or soy bean curd, is high in calcium and protein, and low in fat. Being made of soy beans, tofu is a complete protein, meaning it contains all 8 essential amino acids, an attribute shared with red meat, but rare among most vegetarian fare.

Cooking time: 20 minutes



Recipe

Ingredients

  • 250 grams (8 ounces) tofu
  • 4 tablespoons tamari
  • 4 tablespoons tahini
  • 1 tablespoon natto miso
  • small amount of water (1 or 2 tablespoons)

Method

  • Preheat the oven to 175�C (350�F).

  • Slice the tofu into 1 cm (1/2 inch) thick pieces.

  • Put the tofu into a dish with the tamari and two tablespoons of water and marinate for at least 1 hour. If you can leave it overnight it is even better, as the tofu will absorb more flavour.

  • Arrange the tofu slices flat in a baking dish, keeping the marinade aside.

  • Mix the tahini with one tablespoon of water until it goes creamy.

  • Mix in the marinade and the natto miso. The consistency of this mixture should be just pourable. Add more water if you need to.

  • Spread this mixture over the tofu.

  • Bake in the oven for about 20 minutes until golden on top.
