Nut Paté

This paté is fermented using the natural enzymes of its ingredients. The taste of the result is nothing like the original ingredients would lead you to expect. Your guests may well wonder what this mysterious and tasty paté is made of.

Preparation time: 5 minutes
Fermentation time: about 24 hours


Recipe

Ingredients

  • 1 cup raw almonds
  • 1 cup raw sunflower seeds
  • 1 cup water (use spring water or purified water for the best flavour)

Method

  • Grind the nuts and seeds to a powder.

  • Put into a bowl with the water and mix well.

  • Put the mixture into a dish and cover with cling wrap.

  • Put in a warm, preferably dark, place to ferment. The fermentation can take between 24 and 48 hours, depending on the temperature. At a temperature close to body temperature (38�C / 98�F)it will take about 24 hours. You will know when it is ready because it rises slightly. (You will know if you have left it too long because it no longer tastes good!)

  • Before serving, garnish the top with fresh herb leaves, such as basil or sage.

Serve with crackers and raw carrot and celery sticks.
