Orange Cake
Alright, we admit it, this cake is not extremely fast or healthful. But the taste is wonderful.
Preparation time: 40 minutes (including the time needed to boil the oranges)
Cooking time: 60 minutes
Recipe
Ingredients
- 2 whole oranges
- 300 grams (10.5 ounces) freshly ground almonds
- 250 grams (9 ounces) raw sugar or mild flavoured honey
- 6 eggs
- 1 1/4 teaspoons baking powder
Method
Preheat the oven to 190�C (375�F).
Wash the oranges and boil them whole. This takes 20 minutes in a pressure cooker, or 40 minutes in a saucepan.
Cool the oranges, and remove the stem and pips.
Blend the oranges, skin and all in a food processor and blend.
Beat the eggs in a bowl.
Add all the other ingredients, including the oranges, to the beaten eggs and mix well.
Pour the mixture into non-stick 23 cm (9 inch) cake tin and bake for 45-60 minutes.
Check with a skewer to see when it is cooked: it should be firm but moist. Depending on the juiciness of the oranges it may take up to an hour to cook.
