Refried Bean Dip

This Mexican style dip is a tasty protein snack.

Recipe

Ingredients

  • 450 grams (1 pound) cooked kidney beans, fresh or canned
  • 1/2 cup tomato puree
  • 1 onion
  • optional: a dash of chilli

Method

  • Chop the onion and put into a pan with a tablespoon of water.

  • Cook the onion on high heat for 3 - 4 minutes until soft, stirring and adding more water if needed.

  • Put the cooked onion into a food processor with all the other ingredients.

  • Blend till smooth.

  • Serve warm with avocado and corn chips or pita chips.
