Rice Pudding

This recipe does not strictly belong in a wholefood, low fat cookbook. However it is included because of its spiritual symbolism.

In India in the Hindu tradition, the Full Moon of July is named 'Guru Poornima'. This is the day of the year when the gurus are honoured, and the Full Moon is considered to carry special forces. It is traditional to make a rice pudding and leave it outside overnight to catch the energy of the Full Moon.

The rice pudding is made of white milk, white rice and white sugar so it can resonate with and take on the energy of the Moon. This is one time when wholemeal alternatives are not even an option!

Recipe

Ingredients

  • 4 tablespoons white rice
  • 1 litre (1 2/3 pints) milk
  • 2 tablespoons white sugar
  • pinch of salt
  • few drops of vanilla essence
  • nutmeg to sprinkle on top
  • optional: to make this taste Indian, add 6 cardamon pods.

Method

  • Preheat the oven to 175�C (350�F).

  • Put all ingredients in a baking dish, spreading the rice evenly through.

  • Bake in the oven for 1 to 1 1/2 hours.
