Spicy Lentil Pie

This is a great-tasting dish with surprisingly simple ingredients. If you do not have all of the seasonings in your cupboard, feel free to substitute your own and create something new.

Preparation time: 25 minutes (including the time required to boil the lentils and potatoes)
Cooking time: 30 minutes

Ingredients

  • 1 cup (210 grams / 8 ounces) brown lentils
  • 1 potato
  • 1 onion
  • 1/2 cup tahini
  • 2 tablespoons sesame seeds
  • 2 teaspoons miso paste
  • 2 teaspoons poppy seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon mixed herbs
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper or black pepper - according to the type of spicy heat you prefer
  • 1/4 teaspoon garam masala
  • 1/4 teaspoon tumeric
  • 1 sheet wholemeal pastry

Method

  • Pre-heat the oven to 175�C (350�F).

  • Put the lentils in a pot of boiling water and cook for 15 minutes.

  • Peel and chop the potato into small cubes and add to the boiling lentils and cook for a further 10 minutes.

  • While these are cooking, line a non-stick pie dish with pastry. Prick a few holes in the pastry and weigh it down with a handful of dried beans (to stop it from puffing up as it cooks). Bake it for 15 minutes then tip out the beans (and keep them to use again for your next pie).

  • When the lentils and potatoes are cooked, take the pot off the heat and drain the water off.

  • Chop the onion and add to the pot.

  • Add in all the other ingredients and mix.

  • Put the mixture into the pie dish lined with the partially-baked pastry.

  • Put into the oven and bake for 20 minutes.

  • Serve with tomato sauce or Tomato Salsa.
