Tomato Salsa
It's easy to make your own tomato salsa from fresh tomatoes.
Preparation time: 5 minutes
Recipe
Ingredients
- 4 large ripe tomatoes
- 1 cucumber
- 1 tablespoon balsamic or red wine vinegar
- 2 cloves crushed garlic
- 1 tablespoon fresh chopped basil
- 1 teaspoon honey
- 1/2 teaspoon crushed red chilli (adjust according to the degree of spice you want)
- 1/2 tablespoon tomato paste
- sea salt and freshly-ground black pepper to taste
Method
Chop the tomatoes into pieces about 2 cm (1 inch) cubed.
Peel the cucumber, cut in half and discard the seeds. Chop the rest into pieces about 2 cm (1 inch) cubed.
Put the tomato and cucumber into food processor with the other ingredients and roughly combine. Be very careful not to over-process: salsa is better when still a bit chunky.
Serving suggestions
over hot pasta or steamed vegetables
as a dip with corn chips, pita chips or raw carrot and celery sticks
spread over flat bread and topped with olives and cheese as an instant 'pizza'
on fresh bread with avocado and alfalfa sprouts
mixed with avocado and lentil sprouts inside small pita breads
