Vegetarian Potée

The more cabbage you eat, the less you are risk of developing bowel (and other) cancers. This is due in part to the fibre in the vegetables, and also to the antioxidant effects of the vitamin C and the antocarcinogenic effects of the cruciferous bioflavonoids and indoles present in all members of the cabbage family.

Recipe

Ingredients

  • 1/2 cabbage
  • 2-3 carrots, cut into thin strips
  • 2-3 boiled or dry-baked potatoes
  • 1 cup (125 g / 4 oz) tofu burgers
  • 1 cup (125 g / 4 oz) vegetarian sausages
  • fresh or dried herbs and spices to taste, such as garlic, mustard, parsley, bay leaves, garam masala
  • 1 tablespoon tamari or soy sauce
  • 1 tablespoon tomato sauce
  • anything else you feel inspired to add, such as pickled onions, olives, sundried tomatoes, artichoke hearts...

Method

  • Shred the cabbage, slice the carrots and chop the potato, tofu and vegetarian sausages into 1 or 2 centimetre (1/2 to 1 inch) sized cubes.

  • Steam the cabbage and carrots for 3 or 4 minutes, till cooked but not too soft.

  • Stir in the tofu and vegetarian sausage pieces.

  • Add the herbs, spices, sauces and any extras and stir through till hot.
