Walnut Stuffed Mushrooms
If you use really large mushrooms for this, it is a meal. Smaller ones make a good entree or snack.

Recipe
Ingredients
- 4 large flat mushrooms
- 2 tablespoons walnuts
- 2 tablespoons fresh wholemeal breadcrumbs
- 2 tablespoons chopped parsley
- 1 very small clove garlic
- 1 tablespoon tamari
- water to mix
Method
Wash the mushrooms and take the stems out.
Steam the mushrooms for about 3 minutes. They should be cooked sufficiently, but still retain their shape.
While they are steaming, grind the walnuts and crush the garlic.
Make the breadcrumbs by grinding fresh wholemeal bread.
Put the breadcrumbs into a bowl and add all the other ingredients except the mushrooms.
Mix well, adding water till you have a malleable consistency.
Put the mushroom caps on a non-stick baking tray, with the concave side upwards.
Press the filling mixture into the steamed mushroom caps, topping each with a walnut half.
Place under the grill for about 5 minutes until browned on top.
