Walnut Stuffed Mushrooms

If you use really large mushrooms for this, it is a meal. Smaller ones make a good entree or snack.

Ingredients

  • 4 large flat mushrooms
  • 2 tablespoons walnuts
  • 2 tablespoons fresh wholemeal breadcrumbs
  • 2 tablespoons chopped parsley
  • 1 very small clove garlic
  • 1 tablespoon tamari
  • water to mix

Method

  • Wash the mushrooms and take the stems out.

  • Steam the mushrooms for about 3 minutes. They should be cooked sufficiently, but still retain their shape.

  • While they are steaming, grind the walnuts and crush the garlic.

  • Make the breadcrumbs by grinding fresh wholemeal bread.

  • Put the breadcrumbs into a bowl and add all the other ingredients except the mushrooms.

  • Mix well, adding water till you have a malleable consistency.

  • Put the mushroom caps on a non-stick baking tray, with the concave side upwards.

  • Press the filling mixture into the steamed mushroom caps, topping each with a walnut half.

  • Place under the grill for about 5 minutes until browned on top.
