Baked Pumpkin Dip

This dip is also excellent as a sandwich spread. Cooking time: 40 - 60 minutes

Ingredients

  • 1/2 a medium-sized pumpkin (to make roughly 3 cups of pulp when cooked)
  • 1 teaspoon smooth (not whole-grain) French mustard
  • 1/4 teaspoon powdered hot mustard (or according to taste

Method

  • Preheat the oven to 180�C (350�F).

  • Put the whole pumpkin in an oven dish and bake until soft. This will 40-60 minutes, depending on how large the pumpkin is.

  • When the pumpkin is cooked, take it out of the oven and cut in half.

  • Take out the seeds and discard them.

  • Scoop out the pulp and put it into a food processor.

  • Add the two types of mustard and blend till smooth.

  • Put into a bowl and serve with crusty bread or pita chips.
