Spinach Fetta Triangles
Spinach and fetta in wholemeal pastry.
Preparation time: 15 minutes
Cooking time: 30 minutes
Recipe
Ingredients
- 200 grams ( 7 ounces) spinach
- 200 grams (7 ounces) fetta cheese
- 2 eggs
- 1 onion
- 1 tablespoon tamari
- 30 grams (1 ounce) pine nuts
- spices to taste, such as garlic and pepper
- 4 sheets wholemeal pastry
Method
Preheat the oven to 175�C (350�F).
Chop the onion into small pieces and put it into a pan with the tamari and a tablespoon of water. Cook on high heat until the onion is soft, stirring and adding more water as needed.
Chop the spinach and steam it for 4-5 minutes until soft.
Break the eggs into a bowl and beat them lightly.
Crumble the fetta as you add it to the beaten eggs. Then add all the other ingredients and mix well.
If you are making four triangles, divide the mixture into four and wrap each portion in a sheet of pastry, folding it into a triangle.
(A hint for perfect triangles: start with a piece of pastry with a length twice its width, and you will find it naturally folds into a triangle in 3 folds.
Place the triangles on a non-stick oven tray and bake for 30 minutes.
