Fast - the recipes involve minimum preparation time. Even the dishes that take an hour or more to actually cook in the oven, in general excel in simplicity as far as actual preparation time goes.
Healthy - the recipes are nutritionally sound, using whole, unrefined ingredients and having no refined sugar and either no, or extremely little, fat. They use fresh ingredients where possible. They are mostly of plant, not animal origin. This automatically makes them low in cholesterol, fat and sugar, and high in fiber.
However, among all these healthy recipes you will find the occasional surprise - the odd dish that does not qualify on all three counts. These have been included anyway, either because they are so simple to make and not that unhealthy, or because they are just so good.
